It was nearly time for dinner and I wasn’t feeling inspired. Upon polling the family, my son reminded me that he’d been suggesting enchiladas for a while. Fajitas, yes, can do…enchiladas…hmmm…I definitely like the idea but I’d never got round to making them.
After googling for enchilada sauce recipes, I went shopping for a list of items such as apple cider vinegar. I wasn’t too sure about the recipe I’d selected as there were many variations of the sauce. So in the end I decided to try and get a jar of enchilada sauce. I returned home with a Tesco Enchilada Kit as I couldn’t find jars of enchilada sauce on its own. The kit contained the required sauces and wraps. The sauces were gluten free but the wraps were not. I had purchased Old El Paso gluten free wraps separately. The wraps from the kit were stored away for the gluten eaters to use in other meals.
It was getting late so I had also bought some cooked piri piri chicken chunks rather than raw chicken. These would also add extra flavour!
So here’s my super quick and easy recipe in full:
- 1 Tesco Enchilada Kit
- 2 packs Old El Paso gluten free tortillas (get 12 packs from Amazon)
- 500g of cooked piri piri chicken chunks (plain cooked chicken or another flavour can be used but I found piri piri was perfect)
- 150g grated cheddar cheese
- 150ml hot water (this is required with the Tesco kit but check the instructions if you use a different kit)
- 1 tbspn oil for greasing the baking dish
Preheat the oven to 200oC (180 oC for a fan oven). In a bowl, mix the sachet of enchilada seasoning with one sachet of the enchilada sauce. Add 150ml of hot water and mix well. Stir in the cooked chicken and half of the grated cheese.
Spoon this mixture down the middle of each wrap. Roll each wrap and place them side by side in a lightly greased baking dish. Place them with the end of the wraps underneath so that they don’t lift up and unroll.
Spread the remaining sachet of enchilada sauce over the top. Then sprinkle over the remaining cheese.
Cook for 20-25 minutes until the cheese is bubbling. Enjoy!
