I’m in no way a potential candidate for the Great British Bake Off TV show but, occasionally, I do like to make my own cakes. Nothing fancy…I’m happy with a simple sponge cake or fairy cakes.
Here’s the recipe I use. It’s straight from the back of the Juvela White Mix packaging.
- 200g Juvela White Mix*
- 1 teaspoon gluten free baking powder
- 200g soft margarine or butter
- 200g caster sugar
- 4 medium eggs, beaten
Mix everything together in a bowl until light and fluffy. Divide the mixture between twelve cake cases. Bake in preheated oven at 180oC/350oF/Gas Mark 4. The fairy cakes will be done in ten to fifteen minutes. They are sooo easy to make….I don’t know why I don’t make them more often!
The cakes should have risen and turned golden brown. Remove from the oven and leave on wire rack to cool. I have to admit that I can never wait for them to cool completely and munch a few whilst they are still warm. I can’t decide whether I like the taste better when they are warm or cool.
Once cooled, they can be decorated with icing. I recently served them with strawberries and cream for an afternoon treat.
If you want to make a sponge sandwich, this mixture can also be used for a sponge sandwich cake. Divide the mixture between two sandwich tins and bake for 20 to 25 mins.
* I actually used the fibre mix in my recipe instead of the white mix. The white mix is a finer flour whereas the fibre mix has a bit of a crunch. It can be used in the same proportion as the white mix. I find that the fibre mix works well for many uses (cakes, pancakes, pastry, wraps).
I decided to share this recipe with you to show how you don’t have to miss out on simple baking. The Juvela mixes are easy to use as there is no need to buy and mix multiple types of flour. The cakes also taste great.
Juvela mixes are available on prescription if you have coeliac disease. Otherwise, the only place I’ve seen them available to buy is on Amazon. However, I know that some people with coeliac disease are struggling to get items on prescription and Juvela flour mix is quite expensive to buy.
